Have you ever wondered what our store name, ‘Mizu’ means?
Well, it translates as ‘water’ in Japanese. Our message here at Mizu is:
‘We will care about our food, starting from the point of using thoroughly filtered water, sourcing healthier ingredients, and following our authentic and original recipes to reach out to our customers.’
Just like in all of Japanese culture, water is important to us here at Mizu Bread!
In Japan, water stands for purity, clarity and calm. But, did you know that not all water is equal? It’s very common for food manufacturers in Japan to communicate about the quality or type of water.
For example, ‘mineral-rich water’ comes from natural springs ‘hard water’ has a high mineral content, and ‘soft water’ has less minerals.
Here at Mizu, all of our foods and drinks use water that is free of both chlorine and fluoride. Of course, this includes your drinking water at our cafés too! 😊
These days, it’s easy to find a water filter that removes chlorine, but we take a step further and get rid of fluoride as well!
If you are looking for a good water filter, we get our cartridges from NZ Filter warehouse in East Tamaki - https://www.nzfilterwarehouse.com/ —we’ve been loving their water filter for more than ten years now!
Have you heard that sourcing good water is important for sake making?
Well, the same goes for many other food providers in Japan, including ramen restaurants and tofu manufacturers, and bakeries are no exception.
To us, this is what the word ‘Kodawari’ is all about - Passion, commitment and attention to every detail—including those as trivial as sourcing water.
