Our house-made panko

Here at Mizu Bread, we love our Japanese breadcrumbs – or ‘panko!’

These large dried crumbs, or flakes, don’t absorb as much oil as regular breadcrumbs, making them the perfect crispy coating for our popular Curry Pan and Katsu Sando!

Did you know our panko breadcrumbs are handmade in Mizu’s kitchen? We make it by crumbling our favourite Shokupan white bread, and then baking it in the oven. This makes it crunchy and delicious.

Here at Mizu Bread, we love to reduce our food waste. So any leftover loaves are recycled into breadcrumbs, which then become our light and tasty panko!

Another good thing about our house-made panko is it’s free from factory-grade cooking oil, which you will find in most panko on the market. This means our panko is healthier and more natural.

Here’s a little fun fact on panko - the word ‘panko’ is actually defined as ‘dry breadcrumbs made from crustless wheat bread.’

So, you see, technically speaking, our panko is not really panko! We like to add Shokupan crusts, which means, our ‘panko’ is not actually ‘crustless…’

Still, our ‘panko’ has all of the flaky crunchiness you would expect from traditional Japanese panko, so we prefer to stick with the word ‘panko.’ 😉

If you like our house-made panko as much as we do, we are happy to share some with you! Just bring your container to Symonds café, and you can usually take some home for just $6 for 200g.

See you there!
